INGREDIENTS:
2 medium zucchini, cut into 1/3s lengthwise
1 red bell pepper, cut into 1-inch-wide strips
1 yellow bell pepper, cut into 1-inch-wide strips
1 red onion, peeled, cut into 1/4-inch-wide slices
2 medium tomatoes, halved crosswise
3-4 portobello mushroom caps, sliced thick
2 tablespoons olive oil
4 boneless skinless chicken breasts
1/3 cup thinly sliced basil
1 1/2 teaspoons red wine vinegar
DIRECTIONS:
Prepare barbecue or cast iron skillet (medium-high heat). Place veggies into a large bowl and drizzle oil over and sprinkle generously with salt and pepper; toss to coat. Grill vegetables until tender and slightly charred. Transfer to cutting board.

Super easy, super yummy and a great way to use the Georgia peaches that are in season now...
2 Boneless Pork Chops, trim fat
8 Garlic cloves
2-3 TBSP minced fresh rosemary
7-8 TBSP extra virgin olive oil
Coarse salt and fresh pepper to taste
6 small peaches, skin on, cut in half and pitted
4 TBSP unsalted butter (like Kerrygold), cut into small pieces
Lay the meat out on a work surface and pound to an even thickness of 3/4 inch.

INGREDIENTS
2 scallions, thickly sliced
2 garlic cloves, smashed
2 habanero chiles, stemmed and seeded
1 tablespoon low-sodium soy sauce
juice of 1 lime
2 teaspoons ground allspice
1 teaspoon freshly ground black pepper
1 teaspoon thyme leaves
1/4 teaspoon freshly grated nutmeg
One 1-inch piece of fresh ginger
pork tenderloin
DIRECTIONS:
In a blender, combine 3 tablespoons of olive oil with the scallions, garlic, chiles, soy sauce, lime juice, allspice, black pepper, thyme, nutmeg and ginger. Puree until smooth. Transfer the marinade to a resealable plastic bag. Add the pork tenderloins, turning to coat. Seal the bag, pressing out the air, and refrigerate for 4 to 8 hours.

Yes, I know potatoes aren't technically Paleo, but I still eat them from time to time. If you are potato-free in your diet, sub in some other type of root veggie like rutabega or parsnips. If you are completely dairy free, just skip the Parmesan cheese.
Ingredients:
2 cups diced red potatoes, unpeeled
1 cup chopped onion
1 cup chopped celery
1 cup chopped carrots
1-1/2 cups reduced-sodium chicken broth
1/2 cup dry sherry
One 2-lb. pork tenderloin, trimmed of silverskin

This is another one that I serve over gluten free pasta...and with a fatty Italian red vino. SO yummy...
Ingredients:
2 28-oz. cans imported Italian plum tomatoes, preferably San Marzano
2# baby back pork ribs, trimmed of excess fat (about 11 ribs)
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 medium yellow onion, finely chopped
2 medium cloves garlic, finely chopped
2-4 Tbs. chopped fresh flat-leaf parsley
1/2 tsp. crushed red pepper flakes; more to taste

This is a pretty typical Sunday "cheat" meal at the Murphy household. Serve with gluten free pasta and some red vino and enjoy!
1 oz. dried porcini mushrooms (optional)
About 3/4 - 1 cup hot water, if using dried mushrooms
2 Tbs. unsalted butter
2 Tbs. olive oil
1 1/2 cups finely chopped yellow or red onion
2/3 cup peeled and finely chopped carrot
1/2 cup finely chopped celery
1 lb. ground beef or half beef and half pork
1 cup white wine
3 Tbs. tomato paste
1 tsp. salt
1 tsp. ground pepper
1/2 tsp. ground nutmeg
4 cups beef broth, heated

I love Italian food...so was on a mission to come up with a recipe for this traditional Murphy Sunday dinner :)
Ingredients
Meatballs
1 lb. Italian sausage
1/2 lb. (grass fed) ground chuck
1 egg
1 large shallot, minced
Pinch of freshly grated nutmeg
Pinch of ground cloves
1-2 tsp dried oregano (use fresh if it is summertime)
2 garlic cloves, minced
Salt and freshly ground pepper, to taste
Sauce
1/4 cup olive oil
1 yellow onion, diced
1 head garlic, smash the cloves
1/3 - 1/2 cup dry white wine
2 large cans plum tomatoes (try to use San Marzano...it makes a difference!)
1 bay leaf
1-2 tsp oregano
1 tsp salt (to taste)

Not exactly gluten free because of the beer; try to find a gluten free beer.
Ingredients:
2 Tbs. olive oil
2 lb. kielbasa, sliced (make sure it's gluten free, hormone-free, etc.)
1 large yellow onion, thinly sliced
1 large red bell pepper, seeded and sliced
1 cup ale
1/2 cup apple cider
3 Tbs. chopped fresh thyme
1 1/2 cups chicken broth
Salt and freshly ground pepper, to taste
1 Tbs. corn starch mixed with cold water (optional)
Directions:
In a Dutch oven over medium-high heat, warm the olive oil. Add the sausages and cook, stirring and turning often, until browned, 4 to 5 minutes. Transfer to a plate.
