1/4 cup olive oil
2 tablespoons fresh lime juice
1 tablespoon grated peeled fresh ginger
8 cups mixed baby greens
1/2 cup chopped fresh cilantro
1 avocado chopped
1 tomato sliced
Whisk first 3 ingredients in small bowl to blend. Season dressing to taste with salt and pepper. Combine mixed greens and cilantro in large bowl. Toss salad with enough dressing to coat. Top with avocado and tomato. Season to taste with salt and pepper.

Ingredients:
1 medium head cauliflower, cut into small florets (about 6 to 7 cups)
2 to 3 tablespoons extra virgin olive oil
2 to 4 tablespoons water
Sea salt to taste
Directions:
Boil cauliflower in water until very tender, about 10 minutes. Drain and place in a blender or food processor. Add olive oil and water, one tablespoon at a time until a smooth consistency, similar to mashed potatoes, is reached. Season with salt and serve immediately. {More...}

Ingredients
2 cups packaged coleslaw mix
1 unpeeled tart apple, chopped
½ cup chopped celery
½ cup chopped green pepper
¼ cup flaxseed oil
2 tablespoons lemon juice
2 tablespoons honey
1 teaspoon celery seed
Preparation:
In a bowl combine the coleslaw mix, apple, celery and green peppers. In a small bowl, whisk remaining ingredients. Pour over coleslaw and toss to coat. {More...}

Ingredients
3 Hass avocados, thinly sliced
1/4 small red onion, very thinly sliced
1 tablespoon extra-virgin olive oil
1 tablespoon red wine vinegar
Salt and freshly ground pepper
Arrange the avocado slices on a platter and top with the onion. Drizzle with the olive oil and vinegar and season with salt and pepper. Serve right away.
